It's finally looking like winter in the Midwest, so this month we've decided to include cuts of our grass fed beef and pastured pork that are perfect for hearty midwinter meals, as well as a couple of recipes that will warm you up during the cold winter evening.

The 10lb. Mixed Beef and Pork share will include:

  • 2lb. Grass Fed Beef Roast.  We're including Joe's recipe for German Pot Roast.
  • 2 1lb. packs of Grass Fed Ground Beef.  And a recipe for savory Swedish Meatballs.
  • 2.5lb. Pork Shoulder Roast.  And a traditional New Year's recipe for good luck: Pork Shoulder and Sauerkraut.
  • 1lb. Pork Bratwurst.
  • 1.5lb. Grass Fed Beef Stew Meat.
  • 1lb. Uncured Bacon.  Our new recipe, free of added Nitrates and Nitrites.

The 15lb. Mixed Beef and Pork share will include:

  • 3lb. Grass Fed Beef Roast.  We're including Joe's recipe for German Pot Roast.

Our customers always ask us what we are planning to put in the next box.  Well, we're getting a little more efficient at this, and this month we've planned ahead.

  • 1lb. Fresh Polish Sausages. Joe's grandmother's family recipe;
  • 1lb. of Traditionally Smoked Bacon. A special treat for Christmas morning;
  • 2lb. Grass Fed Beef Pot Roast. We're working on a special recipe... you'll have to wait to find out what it will be...;
  • 2 1lb. packs of Grass Fed Ground Beef;
  • 2.5lb Boneless Pork Loin Roast;
  • 2-3 Premium Grass Fed Steaks (Ribeye, Strip, or Sirloin)

This month, Joe chose three selections suitable for a quick meal prepared on the backyard grill—ideally with some of that bi-colored sweet corn that’s so delicious right now—including some grass fed burgers for the upcoming Labor Day weekend.

And he selected three items, best cooked indoors, that each makes an abundant family meal with plenty of leftovers for the next day’s lunchbox. Note that two of these selections, kabob and stir-fry, combine nicely with the veggies that are at their prime right now (onions, peppers, zucchini, egg plant, and so on…) so don’t forget to support your local farmer’s market produce vendor this month.

The 10lb. Mixed Beef and Pork box features:

  • 2lb. Pork Belly. This is usually a special order cut, but we’ve set some aside for this month’s share. We have also included an easy and delicious recipe for Braised Pork Belly. Out of this world!
  • 6 Grass fed burger patties (1/3 pound each). May of you have written to compliment us on our burgers (thanks!), so we decided to throw in a pack to make sure that you and yours are well-fed on the long Labor Day weekend.
  • 1lb. Beef Kabob Meat. Lean and tender beef, cut into perfect-sized cubes for grilled kabobs. Head over to the local farmers market for the vegetables (cherry tomatoes, peppers, onions, eggplant… whatever you like). And you’ll need some skewers, too…
  • 1.5lb. Pork Steak. Sometimes referred to as Boston butt, or pork blade steak, this cut comes from the shoulder of the pig.  We think that this is one of the most under-appreciated cuts of pork and we want to get the word out. Season it with some of Joe’s Pork Chop Rub (we’ve included a small sample in your box), and grill it like a steak.
  • 1lb. Beef Stir Fry. Right now, market vegetables are about as good as they’re going to get. So, pick your favorites and cook ‘em up with our Tasty Stir-Fry Recipe.
  • 1lb. Pork Bratwurst with Bacon, Cheddar and Jalapeno. Be our guinea pig... Joe cooked up this new recipe and we hand-made a very small batch that we’re offering exclusively to Buyer’s Club Members. If it meets with your approval, let us know and we’ll offer it to our other, less-favored customers in a couple of months.
  • 2lb. Sirloin Tip Roast. Sirloin Tip is the most flavorful of the common round roasts and the centerpiece of the traditional Sunday dinner on Wisconsin farms. Joe offers up a family recipe for Slow Cooker Italian Beef and Pickled Peppers that takes beautiful advantage of this roast to make a bountiful dinner, with plenty for leftovers.

This month’s selection continues with the most important theme of summer: The Grill. At the same time, we throw in a couple of items that are perfect for a family picnic or a late afternoon nosh on the deck.

The 10lb. Mixed Beef and Pork box features:

  • 6 Grass fed burger patties. Thick and juicy and ready to throw on the grill at a moment’s notice (1/3lb each patty);
  • 1.5lb. Premium Grass Fed Steaks (Ribeyes or New York Strips). Our most popular grilling cuts;
  • 2-2.5lb. Beef Chuck Roast. Perfect to make Pulled Barbecue Beef (recipe included in the box);
  • 1.5lb. Round Steak. Prepare with your favorite marinade, or even better: try a classic South American Chimichurri sauce (recipe included in the box);
  • 1lb. Old Fashioned Smoked Berkshire Bacon. This is a special addition to turn you into a Kettle Range bacon addict;
  • 1lb. Berkshire Pork Scaloppini. Delicate loin cuts, thinly sliced and ready to make a classic dish (recipe included in the box);
  • 1lb. Berkshire Pork Breakfast links. Try these, well browned to accompany a tall stack of pancakes (real maple syrup, please!), waffles, scrambled eggs, or all three… we won’t judge!

Oh, and we’ve also thrown in a FREE SAMPLE of our Uncured Garlic Snack Sticks (2oz.).
